La Cochinita Food Truck Review

Overview

La Cochinita Food Truck brings something different to the local scene. A Tabasqueño-style kitchen on wheels, they focus on from-scratch dishes rooted in the flavors of Tabasco, Mexico, with a clear respect for tradition and just enough modern influence to keep things interesting. This is not your typical taco truck. This is heritage-driven food with real depth.

First Impressions

At first glance, the truck is pretty understated. A simple blue setup that doesn’t scream for attention. And although the back side of the truck adds some Mexican flare, it would be easy to walk past without realizing what is coming out of that kitchen.

That would be a mistake.

Once you know what they are serving, the focus shifts quickly from the exterior to what matters most. The food.

The Food

I sampled three items: the Barbacoa Puffy Taco, a ground beef empanada, and a churro. Each one told a slightly different story, and all of them delivered.

  • Quality: Everything tasted intentional. You can tell this menu comes from chefs who care about technique and tradition. The flavors are layered, not rushed.

  • Flavor:

    • The Barbacoa Puffy Taco was light in texture but deep in flavor. The kind of bite where you pause for a second because it hits harder than expected.

    • The Empanada grounded things with a perfectly crisp shell and a rich, savory filling. Comfort food done right.

    • The Churro… this is where things go off the rails in the best way. Crisp outside, soft inside, coated just right. Honestly, it’s ridiculous. Borderline dangerous.

  • Portion Size: Well balanced. You can sample a few items or build a full meal without overdoing it.

  • Presentation: Clean and unfussy. The food speaks for itself.

Quick note, if and when those churros ever hit retail shelves, they will not stay there long.

Atmosphere

For a food truck, this is a more straightforward experience:

  • Simple, no-frills setup

  • Efficient operation

  • The kind of place where the aroma does most of the talking

Service

I had the chance to meet Armando and his team ahead of time, and that energy carries through to the experience:

  • Friendly and welcoming

  • Clearly passionate about the food and its roots

  • Happy to talk through the menu and what makes it special

That connection to the culture behind the food adds something you cannot fake. And the passion from the chefs will set them apart.

Value

Very fair for the quality you are getting. This is not generic street food. There is real craft here, and the pricing reflects that in a good way.

Final Verdict

Score: 9/10

La Cochinita quietly delivers some of the most flavorful food you will find rolling around Minnesota. But one bite in and it has your full attention.

If you see them parked outside a brewery or event, stop. Order a Puffy Taco. And don’t leave without a churro.

What to Order

At least one churro. Non-negotiable.

Pro Tip

If you see them at a brewery, go early. Once word gets out, lines will follow.

Would I Go Back?

Yes. No hesitation.
